Aji de Gallina

This dish is one of my personal favorites. The creamy chicken sauce has a little spice and reminds us of enchilada sauce. The sauce is served over rice typically with a boiled potato and boiled egg on the side. We normally do without the potato and egg and add a green vegetable. Either way, it is delicious!

Aji de Gallina
1. Place 5 peices of the "common bread" in water to soak. (common bread here is course and not sweetened)
2. Boil one large breast (bone-in) of chicken.
3. Boil 3 aji amarillos until soft.
4. Dice 2 large white onions very finely.
5. Remove bread from water.
6. Tear chicken into bite-sized pieces.
7. Squeeze water from bread using your hands.
8. in blender: blend bread and cream, place in separate bowl
in blender: blend aji and garlic and a little bit of cumin
9. Warm large pot with 1/4 c oil. Once it is very hot, cook onion until tender and translucent (add a little salt). Add aji mixture and bread mixture. Add pepper. Stir until creamy and thickened.
10. Add chicken. Add a little MSG for some added flavor. Serve over rice.
My Birth Week

28 years old. Man that sounds old to me. Besides hosting Larissa's baby shower, this is what else went on during my birth week...
1. I met Manuela's granddaughter, Fio, for the first time. She brought her to work with her, and Ana had a blast having a playmate. I am convinced that they got every toy that Ana owns out of its place.
2. The second library was inaugurated. 2 down, 2 more to go.
3. I turned 28 on Friday! The Smith's watched the girls for us after the inauguration so we could have time to eat dinner by ourselves. Greg took me to my favorite restaurant, Zig Zag. It was delicious, once again.
4. Greg and Kyle went out to Naranjal for the first Bible study. 22 were in attendance. I stayed home with the girls so I could go later in the afternoon...
5. ...to Emilio's family's home. His uncle used to be a preacher but his church dwindled down. We were going to meet with them, converse and study the Bible. We were so excited about this meeting, but Emilio ended up having to work.
6. We ended up taking Ana to the park. In this past year, Ana's love has gone from the trampoline, to the slides, and now to climbing. She did the monkey bars for the first time and LOVES it. She loves to climb.
7. I bought some fruit at our Sunday market on the way home to the park. THEY'RE BACK! Big plums and yummy peaches--I love the fresh produce here.
And one week from today, guess who is coming to town?

Watching the children at a friend's birthday party playing musical chairs, Meg commented on her competitive nature: "That's the kind of game that, when I played, I was out for death." Out for blood is bad enough, but out for death? Note to self about family musical chairs.
Referring to a comment on American Idol: "Ellen really pinned that one on the head." Curiously, he neither nailed that one nor hit that one on the head.
Answered Prayer

Today we are going to the river to baptize Alfredo into the family of Christ. This has been an answer to so many prayers since the time of our move here. Alfredo was Greg's very first language teacher. We have kept our relationship to him throughout the 2 years we have lived here. More details will be posted to the team site soon. And our supporting churches can expect to see the video footage in the near future. Rejoice with us as we welcome Alfredo as a brother this afternoon. We are excited beyond words. Blessings to all on this beautiful Sunday!

MK--11 Months

Is this really possible? Maggie Kate turns one in one month. I cannot believe how quickly this year has passed. OK, sweet girl, at 11 months you...
1. are almost a week away from your harness appointment. You want to move around so badly. In fact, I can no longer leave you on the couch alone because you will lunge off of it. We place you on the tile floor and you "scoot" your way across the room. If the doctor says that you can take your brace off at this next appointment, we are sure that you will learn to crawl in no time.
2. still like milk alot more than table food. I am afraid that your momma is just going to have to make you unhappy in the coming month in order to wean you by the age of one (if that is even possible at the rate we are going). Crackers are definitely your favorite food. You also LOVE cheese tortellini.
3. think your big sister is the funniest person you have ever met. One of your momma's new favorite things is hearing her two girls belly laugh at each other. Ana will laugh really hard just to get you to laugh back, and it always works. You watch her like a hawk when she is around which is a simple reminder to me that she will be one of your role models. I think you have a pretty special sister to set an example for you.
4. scrunch your entire face up with your eyes closed to show extreme happiness. This cracks me up every time, and I love it.
5. wave your hand and arm for "Night, Night," "Bye, Bye," and "Hi." You also use this hand motion (even though the sign is both hands) for "All Done." You have said "all done" (or something close to it) one time. My favorite is when you are done nursing and you sign all done.
6. have definitely picked up on shaking your head for "no." We love to ask you questions and see you answer with a no. Apparently our voice inflection indicates that you should answer in that way. You also shake it fiercely if we are trying to feed you something you do not want.
7. clap your hands. If we applaude you, you join in. If we sing "Happy and You Know It" you clap.
8. love to sing. If you are ever fussy, one of my first attempts to calm you is to sing. Many times, you join in with your sweet little singing tone. You will sometimes sway back and forth or move your upper torso up and down.
9. love seeing other babies. I think that you and Cora are finally a point to notice and appreciate each other. You will coo at her and try to touch her face. The other night at house church you would hand her a toy and then take it back. Although it is a form of Indian giving, you understand some aspect of sharing. :)
10. are still a momma's girl. If I am in a room, you will have a fit if I am not holding you. If I am not present, you are just fine. Sometimes I wish this wasn't the case, but there is a big part of me that loves this part of being the momma.
11. love to take things out and put them in another container. You really love the sound that your sister's blocks make. Also, I put you in front of the fridge when I am trying to work in the kitchen and you love pulling all of the magnets off.
12. have become whiney in this past month, but just yesterday (after your 3 days of fever) you have been so much more pleasant. We keep thinking you are going to have 5 teeth pop through. Currently you only have your two bottom teeth in.
We love you Margeau the 3rd! I can't imagine our life now without you.
(Your hair is almost always in pigtails or a pony-tail so I posted a pic of you after your bath with dry hair. Picture 2 shows how long your eyelashes are. They aren't as long as Cousin Sam's but you definitely get 2nd place. Picture 3 is your position much of the time now. We can't wait to see what you can do out of that brace.)
